Ingredients for the noodles with ribs casserole (4-6 people)

  • 400 gr of noodles nº 4 (thick)
  • 600 gr pork rib
  • 2 onions
  • 3 cloves garlic
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon paprika
  • 40 gr of pate
  • 3 large tomatoes
  • extra virgin olive oil
  • salt
  • parsley

Elaboration of the recipe of Noodles with ribs casserole

Put 1.5 l of water in the fast cooker, add the ribs, season and close the pot.

Cook the ribs for 5 minutes from the moment the valve rises. Remove, strain the broth and separate the meat from the bones. Chop a little and set aside.

Peel the garlic and onions, cut them into small cubes and sauté them in a casserole dish with 4 tablespoons of oil.

When the vegetables are browned (10-15 minutes), add the pork rib meat and brown it a little (3-4 minutes).

Cut the tomatoes in half, grate and add them.

Cook for 8-10 minutes, add the pâté, paprika and cinnamon, mix well, add the noodles, pour 400 ml of broth (from cooking the ribs), season and cook for the time indicated on the package (11-13 minutes).

During cooking, as they dry out, pour in a little more broth (approx. 200 ml).

Serve and garnish the noodles with a little chopped parsley and enjoy this delicious dish of noodle casserole with ribs !

Tip for perfect rib noodles

This dish must be mellow, neither dry nor soupy, so if you notice that they are dry at the end, you can pour a little hot broth into the casserole just before serving.
