Season and when everything is well poached, add the chopped tomato and the bay leaf. Sauté everything and add the saffron, the mint and the paprika. Cover with water and cook for 30-40 minutes.

To make the dough, put the flour, a little water and a pinch of salt in a bowl, mix well and add water little by little until the dough is manageable.

Make not too thick pancakes with the dough. Once they are all made, add them to the pan one by one. When you add them all, wait one minute. After this time, cut the pancakes into small pieces with the help of a spoon or a skimmer. Cook for 15-20 minutes. Serve hot in a deep dish and decorate with a mint leaf.
