Meringue (egg whites) and caramel flan: a delicious dessert by Karlos Arguiñano

Ingredients (6 people):

  • 7 egg whites
  • 60 g sugar (for whipping)
  • 125 g sugar (for the caramel)
  • 1 lime
  • 3 strawberries
  • mint leaves

Meringue and caramel flan recipe step by step

Put 125 g of sugar in a frying pan and heat it until it melts and takes on a toasted color. Pour it into the mold (glass), spread it well and let it cool.

Put the egg whites in a large bowl, add 30g of sugar and whip them with an electric mixer. Add the rest of the sugar (30g), the juice of half a lime and some grated lime zest. Continue whipping for a couple of minutes until stiff.

With the help of a tongue (or spoon) transfer the meringue to the caramelized mold and spread it well.

Bake it in a bain-marie at 160º for 35 minutes. Remove it from the oven and wait for it to cool down (about half an hour). Turn it over and unmold it.

Wash the strawberries, remove the stems and place them on top. Decorate the flan with a few mint leaves.

Tips for making egg white flan by Arguiñano

To unmold the flan easily, run a tip along the edge of the mold, this way you will not have problems when performing this step.
