Grilled endives with pistachio vinaigrette by Karlos Arguiñano, a healthy and simple recipe!

Ingredients (4 persons) for the recipe Grilled endives with pistachio vinaigrette:

  • 8 endives
  • 50 g peeled pistachios
  • 1 tablespoon tamari (or soy sauce)
  • extra virgin olive oil
  • 3 tablespoons cider vinegar
  • salt
  • 10 chives leaves
  • parsley

Elaboration of the recipe Grilled endives with pistachio vinaigrette by Karlos Arguiñano:

For the vinaigrette mix in a bowl the cider vinegar with the tamari and 4 tablespoons of oil.

Remove the outer leaves of the endives and cut them in half. Spread the endive (on the inner side) with the vinaigrette .

Heats the iron and place on top the endives placing the inner part in contact with the griddle. Cook them for 2-3 minutes the top with the oil, spread them with the vinaigrette turn them around and cook them for another 2-3 minutes.

Itchy pistachios and cut the chives Incorporate them into the vinaigrette bowl and mix well.

Serve 2 endives (4 halves) on each plate, season and dress them with the vinaigrette Decorate the plates with a few parsley leaves .

Advice on nutritional information:

We normally consume the natural endives but do not forget that also can be grilled (on a griddle, baked or grilled) and accompany them with a good aioli; or cook them and cover them with a good ham bechamel sauce .
