Soldaditos de Pavia

Ingredients (4 persons):

  • 600 gr of cod (desalted)
  • 1 red bell pepper
  • 30 ml of dry brandy
  • 1 egg white
  • 150 gr flour
  • 200 ml of cold water
  • extra virgin olive oil
  • salt
  • 1/2 teaspoon saffron (powdered)
  • parsley

Elaboration of the Soldaditos de Pavia recipe:

Place the bell pepper on the oven tray, drizzle with oil and season. Roast at 180ºC for 35 minutes. Peel and cut into strips. Set aside.

Sift the flour and put it in a bowl. Add a tablespoon of oil, the saffron, the brandy and a pinch of salt. Pour the cold water and mix well until it is a homogeneous mass. Beat the egg white until stiff and add it to the bowl. Mix well.

Cut the cod into strips, dip them in the batter and fry them in a frying pan with plenty of hot oil. Drain them on a plate lined with absorbent kitchen paper. Serve the little soldiers with their bell pepper strips. Garnish with some parsley leaves.
