Ingredients (4 persons):

  • 650 g mushrooms
  • 1-2 spoonfuls of mustard (to taste)
  • 1 lemon
  • 8 slices of bread
  • extra virgin olive oil
  • salt
  • 1 cayenne pepper
  • 12 chive leaves
  • parsley

Recipe of mushrooms in mustard sauce step by step

Wash the mushrooms in a large bowl with water, drain and dry them a little.

Heat 3 tablespoons of oil in a deep skillet or wok, add the cayenne and mushrooms, season and cook over medium-high heat for approximately 10-12 minutes.

Add the mustard and a little lemon zest, mix well and sauté the mushrooms for a couple of minutes. Finely chop the chive leaves and sprinkle them.

Heat plenty of oil in a frying pan. Cut 8 slices of bread, place them (in batches) in the pan and fry them on both sides. Remove and drain them on a plate covered with absorbent kitchen paper.

Divide the mustard mushrooms among 4 plates, serve with 2 slices of bread and garnish with a few parsley leaves.

Tips for making Arguiñano's sautéed mushrooms

It is important to clean the mushrooms well and remove any dirt that they may have because if we find some, the dish will be ruined.

When preparing this recipe we should know that mushrooms have interesting nutritional properties: they have a high satiating power; the number of calories is minimal; they contain fiber that will help people with constipation.

An interesting option is to prepare mushrooms stuffed with different sauces or ingredients: mushrooms stuffed with hollandaise sauce, mushrooms stuffed with leek and apple sauce or grilled mushrooms with shrimps, are some of our proposals.
